1 kg d’aubergines de petite taille (qui ne dépasse pas les 8 cm)
1 litre d’eau
35cc de vinaigre de pomme
1e cuillère à soupe de gros sel
Faites bouillir l’eau dans une casserole.
A l’ébullition, plongez les aubergines pendant 5 minutes, puis enlevez-les de l’eau bouillante et plongez-les immédiatement dans de l’eau froide pour que l’aubergine ne noircisse pas.
Coupez l’aubergine par le milieu et farcissez-la d’ail haché.
Placez les aubergines dans bocal hermétique, versez-y l’eau, puis ajoutez le gros sel et le vinaigre.
