Soupe phénicienne : une recette ancestrale pleine de bienfaits

Quand le froid s’installe, rien ne vaut un bon plat chaud pour se réchauffer et faire le plein d’énergie. La soupe phénicienne, issue des traditions culinaires anciennes, est une recette simple, nourrissante et pleine de saveurs. Riche en légumineuses et en céréales, elle constitue un repas complet à elle seule.
Les ingrédients de la soupe phénicienne
Pour préparer cette soupe généreuse et savoureuse, il vous faudra :

- 1/2 tasse de pois chiches
- 1/2 tasse de haricots blancs ou rouges
- 1/2 tasse de grains de blé
- 1/4 tasse de lentilles
- 1/4 tasse de riz
- 1 grosse pomme de terre coupée en petits cubes
- 1 gros oignon finement haché
- 3 cuillères à soupe d’huile pour la friture
- 2 cuillères à soupe d’huile d’olive
- Sel, cumin et le jus d’un citron pressé
Préparation de la soupe phénicienne pas à pas
Commencez par faire tremper les pois chiches, les haricots et les grains de blé dans de l’eau pendant toute une nuit. Ils doivent doubler de volume. Le lendemain, égouttez-les soigneusement et rincez-les à l’eau claire pour enlever les impuretés.

Dans une grande marmite, faites bouillir le blé dans un litre d’eau pendant environ vingt minutes. Ensuite, ajoutez les pois chiches et laissez cuire encore vingt minutes à feu doux. Puis, incorporez les haricots et laissez mijoter jusqu’à ce qu’ils soient bien tendres. Si le niveau de l’eau baisse, ajoutez de l’eau chaude pour maintenir un bon volume de soupe.
Pendant ce temps, faites revenir l’oignon haché dans l’huile jusqu’à ce qu’il prenne une belle couleur brune. Égouttez-le et ajoutez-le dans la marmite. Incorporez ensuite les pommes de terre coupées en petits dés, ainsi que les lentilles, le riz, l’huile d’olive et le sel.
Une soupe traditionnelle, saine et équilibrée

Laissez mijoter votre soupe phénicienne encore trente minutes à feu doux, en couvrant la marmite. Juste avant de servir, ajoutez le jus de citron et une pincée de cumin pour relever les saveurs. Ce plat végétarien riche en fibres et en protéines est excellent pour la santé.
Parfaite pour les repas en famille, la soupe phénicienne est une alternative saine et réconfortante aux plats industriels. C’est aussi une belle façon de renouer avec les recettes du patrimoine culinaire levantin.
Servez la soupe chaude ou froide selon la saison en l’assaisonant de cumin et du jus d’un citron pressé.
