1/2 tasse de persil haché
Lavez les lentilles à l’eau et égouttez-les. Mettez-les dans une casserole et couvrez-les d’eau potable. Faites-les cuire à feu doux pendant 15 minutes.
Pendant ce temps, lavez le blé concassé fin à l’eau, égouttez-le et placez-le dans un bol. Lorsque les lentilles sont molles, placez le blé concassé égoutté dans le bol avec les lentilles et couvrez la casserole. Après 10 minutes, vérifiez le mélange et remuez. Le blé concassé fin doit être mou, sinon, ajoutez une tasse d’eau et faites cuire doucement. Ajoutez la coriandre, le sel et le poivre au mélange et remuer.
Faites frire les oignons dans l’huile d’olive (1/2 tasse), jusqu’à ce qu’ils soient dorés. Puis ajoutez-les au mélange de lentilles, de blé concassé fin et de persil haché et mixez le tout. Pétrissez le mélange pendant plusieurs minutes, soit avec la paume des mains, soit dans une batteuse électrique, jusqu’à ce qu’il devienne collant comme une pâte. Formez des boules. Vous pouvez les servir à température ambiante avec des radis, des tranches de tomates ou les faire dorer sur une plaque à four et les servir avec une salade verte.
