La recette n’est pas trop compliquée mais nécessite du temps et de l’effort.
Pour 8 personnes, nous allons avoir besoin de :
Pour la pâte:
400 g de farine
3 œufs1 cuillère à café de sel
100 ml d’eau tiède
Pour la sauce:
4 cuillères à soupe de yaourt
2 gousses d’ail
Du sel
50 g de beurre
3 cuillères à soupe de concentré de tomate
Pour la farce:
400 g de viande hachée
1 oignon haché
3 cuillères à soupe de persil
Du sel
Une pincée de poivre
4 gousses d’ail
D’abord, il faudrait préparer la pâte. Vous pouvez utiliser un robot, si vous en avez un, sinon travaillez la manuellement car cela la rend plus élastique.
Dans un bol, mettez les 400g de farine et le sel. Ajoutez-y les œufs avec un peu d’eau et mélangez en malaxant tout en y ajoutant de l’eau en petite quantité.
Une fois, votre pâte à Manti prête à être utilisé, couvrez-la pour qu’elle ne sèche pas.
Passez à la farce. Faites revenir l’oignon avec la viande hachée. Poivrez et salez puis ajoutez les gousses d’ail après les avoir bien écraser et le persil. Ajoutez-y un verre à café d’eau et couvrez. Une fois la farce cuite, mettez-la de côté pour qu’elle refroidisse. Une fois froide étalez la pâte sur un plan bien fariné et découpez-la en petites rondelles. Versez une cuillère à café de la farce sur chaque rondelle et fermez en formant ainsi une boulle.
Pour la sauce, dans une petite casserole, faites fondre un bon morceau de beurre et faites revenir l’ail haché. Une fois doré, ajoutez le concentré de tomate et portez a ébullition puis salez.
Dans plat à servir déposez les köftes. Recouvrez-les de yaourt nature, puis de la sauce tomate et servez !
